i’m kind of obsessed with food & especially with the food i prepare. that’s not me being cocky, that’s me being proud of myself because i was once a not-so-great cook & didn’t even like preparing meals. anyway, i’ve been considerably health-conscious for the last few months & it all revolves around food, because i sure as hell don’t use that...
oh me, oh my! vegan lasagna!
i was inspired to cook up some vegan lasagna after stumbling upon a recipe for tofu ricotta last week.
for the actual lasagna, i used the first recipe i found after a quick google search & just modified it a smidgen. i.e. i pureed a jar of roasted red peppers to add to the sauce & also tossed in some mushrooms.
yum! the only thing missing was a guest or two to share my dinner with...

we very happily rang in this beautiful new year. i feel so lucky to have been able to spend it with some of my favorite people (B, V, amber & kyle). a couple days before NYE we decided we would research NYE traditions from around the world & do as many of them as possible at midnight. it ended up being a very silly & playful way to celebrate the beginning of 2012.
